Greek Style Whole Wheat Pita Flatbread

Pita has transcended its origins and is now enjoyed globally, often found in Mediterranean and Middle Eastern dishes.

In a bowl, combine 2 cups of lukewarm water, 1/4 cup of whole milk, 3 tablespoons of granulated sugar, and 2 and 1/4 teaspoons of active dry yeast.
Whisk together 2 teaspoons of salt with 1/2 cup of all-purpose flour in another bowl to keep the salt from killing the yeast.
Let the yeast mixture sit for about 10 minutes until a foamy cloud appears on top.
Add 2 tablespoons of plain whole milk yogurt and 2 tablespoons of olive oil to the yeast mixture.
Add the flour and salt mixture to the wet ingredients and knead on low speed for 8 minutes, then increase to high speed for 2 more minutes, for a total of 10 minutes.
Transfer the sticky dough to a bowl oiled with a little olive oil, tossing it to coat in the oil.
Cover the bowl with plastic wrap and let it rise in a warm place until doubled in volume, about 45 minutes to 1 hour.
Dust a work surface with all-purpose flour and transfer the sticky dough onto it, adding more flour as needed to make it easier to work with.
Cut the dough in half, then each half into 4 pieces for a total of 8 pieces.
Form each piece into a circle, using flour to help with stickiness as needed.
Preheat the oven to 525 degrees Fahrenheit and line two baking trays with parchment paper.
Lightly oil the work surface and your hands to prevent sticking while shaping the dough.
Stretch or roll each piece into a circle, using a rolling pin if desired, and place them onto the baking trays.
Bake the pitas in the preheated oven for about 5 to 6 minutes, until they start to bubble and develop golden spots.
If the dough resists stretching, cover it with a kitchen towel and let it rest for about 20 minutes before trying again.
