Make the marinade by combining 1/4 cup olive oil, the juice of 1 lemon, the zest of 1 lemon, 2 teaspoons dried oregano, 1 teaspoon salt, 1 teaspoon freshly ground black pepper, and 1 to 2 cloves of minced garlic in a bowl.

Add 1 lb (500 g) of chicken to the marinade and let it soak in the fridge for at least 1 hour, preferably 2 hours.

Soak wooden skewers in water for about 30 minutes to prevent burning.

Assemble the skewers by skewer the marinated chicken pieces, making sure not to overcrowd them.

Preheat the oven to 230°C (450°F).

Place the skewers on a baking dish and bake for 15 minutes.
