600ml boiling water
37g salt
1 tbs black pepper
1/2 tbs dry thyme
5 bay leaves
1 tbs honey
3 cloves garlic
1/2 bunch parsley
1/2 lemon
2 chicken breasts cut into large cubes

Put all the ingredients for the brine in a cooking pot and simmer on low heat for 3 minutes.

Take the mixture off the heat and let brine cool down to room temperature.

When cool, strain the brine to keep only the liquid, and put chicken cubes in brine for 40 minutes.

Dry out the chicken cubes on paper towel, and put 4-5 cubes on each skewer. Sprinkle chicken with dry oregano.

Brown the chicken on all sides, and finish cooking in the oven for 7-8 minutes at 200C or until the chicken is cooked through.

Serve on fresh pita bread with tzatziki sauce, onions and tomatoes.
