Grate about 1 cup of extra sharp white cheddar cheese.
Add 2 tablespoons of butter to a pan and melt it.
Add 2 tablespoons of all-purpose flour to the melted butter and whisk for about 5 minutes until the color becomes light brown.
Add 1 cup of whole milk while whisking to prevent lumps.
Continue whisking for about 4-5 minutes until the sauce thickens and coats the back of the spoon.
Turn the heat down to low and add the grated cheddar cheese in small handfuls, whisking until melted.
Season the cheese sauce with 1 teaspoon of kosher salt, a few cracks of black pepper, and a few gratings of fresh nutmeg. Taste for seasoning.
Toast a piece of sourdough bread in a small cast iron pan.
Layer shaved turkey on top of the toasted sourdough bread.
Add sliced heirloom tomatoes on top of the turkey and season with a pinch of salt.
Dollop the cheese sauce generously over the turkey and tomatoes, allowing it to cascade down the sides.
Add more grated cheddar cheese on top of the cheese sauce.
Place the sandwich under the broiler for about 5 minutes until golden brown and bubbly.
While the sandwich is broiling, grill a slice of heirloom tomato in a hot cast iron pan for presentation.
After broiling, place the charred tomato slice on top of the sandwich.
Top with roasted peppered bacon and chopped flat-leaf parsley.
