1

Pour 2 cups of rolled oats into a bowl.

2

Cover the oats with milk just to cover them.

3

Cover the bowl and place it in the refrigerator overnight.

4

The next day, the oats will have absorbed all the milk.

5

Toast blanched almonds and hazelnuts in a dry frying pan over medium heat until they start to color and smell wonderful.

6

At the last minute, add some coconut to the pan to toast it as well, being careful not to burn it.

7

While the nuts are cooling, grate a Fuji or Sundowner apple and toss it with a little lemon juice to prevent browning.

8

Mix the grated apple with the soaked oats.

9

Add 2 tablespoons of sultanas and some of the toasted nuts to the mixture, reserving a few nuts for topping.

10

Add honey to the mixture for sweetness.

11

Incorporate natural yogurt into the mixture.

12

Prepare a fruit compote by soaking dried fruits (prunes, figs, apple, peaches, pears, apricots) in fruit juice (apple juice or orange juice) along with a stick of cinnamon and lemon rind.

13

If available, add a couple of cffa lime leaves to the soaking mixture (optional).

14

Once soaked, cook the fruit mixture gently for around half an hour.

15

Allow the fruit mixture to cool before serving, removing the lemon rind, cffa lime leaves, and cinnamon stick.

16

Serve the Bircher muesli topped with reserved toasted nuts.
