Sweet potatoes add nutrients and flavor.
Peel the skin and roots off the onions.
Chop the onions into small squares.
Heat a medium saucepan over medium heat and add 1/2 cup of butter.
Once the butter is melted, add the chopped onions and stir.
Add 2 sprigs of thyme (leaves only) to the onions and cook for about 5 minutes until translucent.
Grate 2 blocks of Swiss cheese (about 16 ounces each).
Add 4 tablespoons of flour to the onion mixture and cook for another 4-5 minutes.
Pour in 4 cups of chicken broth and 4 cups of milk, stirring to combine.
Bring the mixture to a boil, then remove from heat.
Add the grated cheese to the pot and whisk until smooth, ensuring the pot is off the heat to prevent the cheese from solidifying.
Blend the soup using a blender until smooth, avoiding the use of a sieve to retain all the ingredients.
