Zopf

Cultural Context

Zopf is a traditional Swiss bread, typically enjoyed on Sundays and special occasions. Its name, meaning 'braid', reflects its distinctive shape. Often served with butter and jam, Zopf is a symbol of Swiss hospitality and is cherished for its soft, slightly sweet texture. Today, it has found a place in bakeries worldwide, celebrated for its artisanal quality and comforting flavor.

1 kilogram white flour
12 grams salt
15 grams sugar
600 ml. milk
150 grams butter, melted
30 grams fresh yeast
egg yolk with two spoons of milk

Mix the sugar and the flour together.

Heat the milk to 40°C, remove from the heat, then add the yeast and dissolve well.

Combine the flour, milk and yeast mixture with the melted butter.

Mix well, then add the salt.

Knead the dough for 10-12 minutes until smooth, soft and slightly moist.

Place in a lightly oiled bowl and coat on all sides.

Let the dough rise for about one hour in a warm location until it doubles in size.

Split the dough into 4 equal parts.

Split each part into two equal parts, rolling them out into a log shape about 18-inches long.

Place the logs in a wide X shape in front of you.

Pick up the two ends of the bottom log, and move the two ends straight across the other log so they change sides but do not cross over each other.

Repeat the procedure with the other log, and continue the sequence until the braid is finished.

Repeat this procedure with the other three portions, making four separate breads.

Cover the bread with a towel, and allow to rest for 30 minutes.

Make an egg wash from the egg yolk and sugar.

Brush each bread well, place in the pre-heated 200° C oven and bake for 30 minutes.
