500 grams paneer
2 tablespoons ghee or oil
1 teaspoon cumin seeds
1 onion, finely chopped
2 green chilies, slit
1 teaspoon ginger-garlic paste
2 tomatoes, pureed
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish

Boil the milk on medium heat until it starts to simmer.

Once the milk is hot, reduce to low heat and stir in 1 tablespoon of apple cider vinegar.

Continue adding vinegar, about 1 tablespoon at a time, until the milk curdles, using about 6 tablespoons total.

Once curdled, remove from heat and strain the curds through a muslin cloth.

Gather the cloth and press the curds into a shape, placing a weight on top to help it firm up.

Let the pressed curds sit for several hours before tasting.
