Add 1 teaspoon citric acid (or lemon juice) to the bowl.

Gradually add 1.5 cups water, mixing slowly to avoid lumps, until a smooth batter is formed.

Add 1 tablespoon cooking oil to the batter and mix again until shiny.

Let the batter rest for 10 minutes.

Prepare a steamer with a stand and add about 1.5 glasses of water, cover, and bring to a boil.

Grease a cake tin with oil using hands or a brush.

After 10 minutes, add 1 packet of fruit salt (eno) to the batter and activate it with 2 tablespoons of water, mixing gently.

Pour the batter into the greased tin and place it in the steamer.

Add 0.5 cup water, 1 tablespoon sugar, 0.25 teaspoon salt, and 0.5 lemon juice to the tempering and bring to a boil.

Once the dhokla has cooled, cut it into pieces and remove it from the tin using a knife if needed.

Pour the tempering syrup over the dhokla pieces and let it absorb for 5 minutes before serving.
