150 gm gram flour (besan)
2 tsp ginger and green chilli paste
2 tbsp semolina (sooji)
salt to taste
1/3 tsp turmeric powder
1.5 tbsp sugar
1 tsp fruit salt (Eno-unflavoured)
2 tbsp lemon juice
1 tsp cooking oil
150 ml water (lukewarm)
3 green chilli (split)
curry leaves
1 tsp mustard seeds
2 pinch asafoetida (hing)
1/2 tsp sugar
1/3 tsp salt to taste
coriander leaves
2 tbsp cooking oil

Combine gram flour, semolina, ginger and green chilli paste, turmeric powder, sugar, and salt in a mixing bowl.

Add lukewarm water and lemon juice to the mixture and mix well until smooth.

Add fruit salt (Eno) and gently fold the mixture until it foams.

Grease a steaming tray with cooking oil and pour the batter into it evenly.

Place the tray in a steamer and cover, steaming for 15-20 minutes until a toothpick comes out clean.

Remove from the steamer and let it cool slightly before cutting into squares or diamond shapes.

For the tempering, heat cooking oil in a small pan, add mustard seeds, split green chillies, curry leaves, and asafoetida.

Add sugar and salt to the tempering and mix well before pouring it over the dhokla.

Garnish with coriander leaves.
