2 cups Besan (gram flour)
¾ tsp Salt
¼ tsp Turmeric
1 cup Water
½ cup Curd (yogurt)
2 tbsp Sugar (powdered)
1 tsp Green Chilli Paste
1 tsp Ginger paste
2 tbsp Oil
2 tbsp Lemon juice
1 tsp Baking Soda or ENO
3 tbsp Oil (for tempering)
3 tsp Mustard Seeds (small rai)
6 nos Green chillies
Handful Curry Leaves (optional)
2 Cups Water (for steaming)
3 tbsp Sugar (for tempering)
Salt to taste
¼ cup Lemon Juice (for tempering)

Combine Besan, Curd, and Water in a bowl until smooth.

Add Turmeric, Sugar, and Salt to the mixture and mix well.

In a separate bowl, mix Baking Soda with Lemon juice and let it foam.

Fold the foamed mixture into the batter gently.

Grease a steaming tray or plate with Oil.

Pour the batter into the greased tray evenly.

Place the tray in a steamer and cover.

Steam for 15-20 minutes until a toothpick comes out clean.

Remove from the steamer and let it cool slightly.

Cut the dhokla into squares or diamond shapes.

Heat Oil in a small pan, add Mustard Seeds, Green chillies, and Curry Leaves.

Pour the tempering over the dhokla and garnish with additional Coriander and Coconut.
