Start by making the marinade for the paneer using yogurt, tomato paste, salt, granulated garlic, oregano, chili powder, and ground cumin; mix well.

Cut the paneer into about half-inch cubes and add to the marinade; let marinate for anywhere from 15 minutes to overnight.

Heat a pan with a little neutral oil and add the marinated paneer; cook until the paneer is nice and golden and warmed through.

Remove seeds from kashmiri chilies and pasilla pepper, break them up, and shake out the seeds.

Add the chilies and carom seeds to a coffee grinder and blend until you have a coarse grind.
