In a large pan on medium/low heat, add 1/2 cup of ghee and let it melt completely.

Next, add 1 1/2 cups besan and mix thoroughly with the ghee.

Cook the ghee and besan mixture until it transforms from crumbly to smooth and the ghee begins to release. The whole process can take up to 35-40 minutes. PRO TIP: Be sure to do this step on medium/low heat so you don’t burn it. Low & slow is the key!

Once the consistency is smooth, add 1-2 Tbsp of water - you will see small bubbles begin to form in the mixture.

Mix this once again and then remove from the heat and pour into another bowl to cool completely.

Once the mixture is completely cooled, you can now add 1 tsp cardamom powder, 2 tsp crushed pistachios, 2 tsp crushed almonds, and 1 cup powdered sugar.

Work the powdered sugar into the mixture until everything is incorporated and it forms a dough.

Once the dough is formed and smooth, take about 2 Tbsp of dough at a time and roll them into balls.

Garnish with slivered pistachios & almonds.
