Heat a pan on low flame and add around 2 teaspoons of ghee.

Gradually add 1/4 cup of ghee as it melts.

Once the ghee is melted, add 1 cup of gram flour and roast on low flame for around 2-3 minutes, stirring constantly and breaking lumps.

Add 1 teaspoon of ghee and roast again for about 4-5 minutes, continuing to stir and break lumps.

Add the last 1 teaspoon of ghee and keep roasting.

After around 15 to 20 minutes, the ghee will start to release and the gram flour will become aromatic; keep roasting continuously.

Add 1/8 teaspoon of cardamom powder and combine well.

Add 1/8 teaspoon of freshly grated nutmeg and continue roasting.

After about 25 to 30 minutes, turn off the flame when the ghee has completely started to release and the gram flour is soft and smooth in texture.

Remove the mixture into a bowl and let it cool for about 20 minutes.

Once cooled, add 1/3 cup of finely grated jaggery and mix until well combined; the mixture should be kneadable into a dough.

Grease your hands with ghee, take a lime-sized portion, and roll it into a ball.

Repeat the rolling process for the remaining mixture.

Garnish with some almonds and pistachios.
