1 teaspoon fenugreek
1 teaspoon black pepper
1 teaspoon green cardamom
1 tablespoon cumin
1 tablespoon coriander
1 tablespoon red chili
1 teaspoon nutmeg
2 tablespoons paprika
1 tablespoon ginger
1 teaspoon allspice
1 teaspoon turmeric
1 teaspoon cinnamon
1 teaspoon salt

In a heavy skillet over high heat, toast your whole spices.

Toast cloves, fenugreek, black pepper, green cardamom, cumin, coriander, and red chili for about three minutes or until very fragrant, shaking the pan frequently to prevent burning.

Transfer the toasted spices onto a plate and let them cool completely before grinding.

Crack the roasted green cardamom pods to remove the seeds from the shell.

Grind the green cardamom and the rest of the toasted spices until a fine powder, using a coffee grinder if needed.

Add nutmeg, paprika, ginger, allspice, turmeric, cinnamon, and salt to the ground spices.
