Start by cleaning the cockles. Use mineral water with salt, not tap or sparkling water. Mix 4 tablespoons of salt per liter of mineral water.

Rinse the cockles in the salted mineral water, rubbing them together and removing any that do not close when handled.

Drain the cockles and place them in a container with the same salted mineral water to rest for 45 minutes to an hour to allow them to purge sand.

After resting, remove the cockles carefully to avoid disturbing the sand at the bottom.

In a small frying pan, heat the olive oil until warm, but not too hot.

Add minced garlic to the warm oil and fry for about 15 seconds, then turn off the heat, letting the residual heat cook the garlic.

Add the vinegar and lemon juice to the garlic oil mixture, stirring slightly and allowing it to warm up with the residual heat for 15 seconds.

In a previously heated pot, add the cockles without any additional water. Cover the pot as soon as they start to open.

Cook until the cockles are fully opened, which should happen quickly. Turn off the heat once they are open.

Drain the cockles and serve them topped with the garlic oil dressing.
