Olive oil is healthier and adds a different flavor profile.

1

In a bowl, mix the chicken pieces with chopped onions, garlic, minced ginger, the berbere spice blend, and a pinch of salt. Let it marinate for at least 40 minutes.

2

Heat a few tablespoons of vegetable oil in a large pot over medium heat. Add the remaining chopped onions and sauté until translucent.

3

Add the remaining minced garlic and ginger to the pot and cook for another minute.

4

Stir in the tomato paste and the rest of the berbere spice blend. Cook, stirring constantly, for a couple of minutes until fragrant.

5

Add the marinated chicken pieces to the pot and brown them on all sides.

6

Pour in the chicken broth or water, enough to cover the chicken pieces. Bring to a simmer, then cover the pot and let it cook over low heat for about 30 minutes to 1 hour, or until the chicken is tender and cooked through.

7

Once the chicken is cooked, gently place the hard-boiled eggs into the pot, nestling them among the chicken pieces.

8

Taste and adjust the seasoning with salt if necessary.

9

Simmer uncovered for an additional 10-15 minutes to allow the flavors to meld together and the sauce to thicken slightly.
