Start by heating a dry pan and adding chopped onion and garlic.

Add ginger to the pan with the onion and garlic.

Toast coriander seeds, cloves, peppercorns, and a cinnamon stick in the pan.

Add turmeric, fenugreek, cumin, oregano, and salt to the pan and toast the spices.

Add a generous amount of clarified butter to the pan and bring it to a simmer.

Cook the butter for about 15 minutes, skimming off any dairy residue that rises to the top.

Cook chopped onion, garlic, and ginger on medium heat with a little butter for about 25 minutes until the liquid cooks off and the mixture turns golden.

Add crushed tomatoes to the onion mixture and let it simmer for about 45 minutes.

Pour the spiced butter into the sauce and mix well.

Transfer the mixture to a baking dish and bake in the oven at 170°C for an hour and a half.
