1

Wash the chicken with salt and lemon juice.

Chop 4 kg of onions finely using a food processor.

3

In a large pot, add the chopped onions on medium heat and cook for 8-10 minutes until moisture is mostly gone.

Add minced garlic to the onions and cook for another 10 minutes, stirring frequently.

5

Add 5 tablespoons of berbere powder to the pot, stirring continuously on low heat for about 45 minutes, adding small amounts of water to prevent burning.

Add salt to taste and continue stirring for another 30 minutes, adding more water as needed.

7

Remove the skin from the chicken and add the chicken pieces to the pot, stirring to coat with the onion and spice mixture.

8

Cover the pot and cook on low heat for 1 hour, stirring occasionally.

9

Make small crosses on the top and bottom of the hard-boiled eggs before adding them to the pot.

10

Add the hard-boiled eggs to the pot and cook for an additional 20 minutes on low heat.

11

Add a bit more Kibby and a pinch of MEK Alicia, cooking for another 2-3 minutes before serving.
