Tikil Gomen (Ethiopian Cabbage) Recipe

Heat vegetable oil in a large pot over medium heat until shimmering.

Add chopped onion and sauté until translucent, about 5 minutes.

Stir in minced garlic and grated ginger; cook for 1-2 minutes until fragrant.

Add turmeric and cumin; mix well and cook for another minute.

Incorporate chopped cabbage, carrots, and potatoes; stir to combine.

Season with salt and black pepper; mix thoroughly.

Pour in water to cover the vegetables; bring to a boil.

Reduce heat to low, cover, and simmer for 20-25 minutes until vegetables are tender.

Add lemon juice and stir gently to combine.

Garnish with chopped fresh cilantro before serving.
