I used 7 tablespoons of red teff. Add a pinch of salt, a little baking powder, ½ teaspoon of mitmita (adjust if you’re sensitive to spice), a small amount of korerima (black cardamom), and ½ tablespoon of berbere (also adjustable for spice level). Add 1 tablespoon of oil, then mix everything well. Gradually add water and stir until you get a thin batter suitable for making kita. Let the batter rest for 30 minutes. Heat a pan over medium heat, add a little oil, and cook the kita. I was able to make 4 small kita with this batter. Allow them to cool, then break them into small pieces. Transfer the pieces to a bowl and add niter kibbeh (Ethiopian spiced butter). Mix until the chechebsa becomes soft and well coated. Next, prepare the eggs. Crack 2 eggs into a bowl, add a pinch of salt, and whisk. Heat a small amount of oil in a pan and cook the eggs on both sides until done. Cut the cooked eggs into pieces and mix them into the chechebsa. Transfer everything to your serving plate. Add 4 tablespoons of yogurt on top.
