Make deep cuts all over the goat shoulder for the marinade to penetrate

Season the meat with salt and lime juice

Add a good quantity of ginger-garlic paste

Add 2 teaspoons of green chili paste

Sprinkle half of the berbere spice blend over one side of the shoulder

Add 1 teaspoon of ghee and massage everything into the meat

Turn the shoulder over and repeat the seasoning process on the other side

Marinate the shoulder in the fridge for 24 hours

Take the marinated shoulder out of the fridge 1 hour before cooking

Prepare vegetables: onions, potatoes, carrots, and bell peppers

Place the vegetables under the meat in the baking tray

Pour chicken stock mixed with 1 tablespoon of tomato puree around the meat

Add a dash of oil on top and sprinkle with parsley or coriander

Seal the baking tray with foil tightly

Bake in a fan oven at 160 degrees Celsius for 2.5 hours

After 2.5 hours, remove the foil and check the meat

Spoon some of the juices over the goat shoulder and return it to the oven uncovered for 30 minutes

After 30 minutes, remove from the oven and serve
