Lavar la carne de chivo con abundante zumo de limón, incluyendo la corteza.
Masajear bien la carne con el limón y enjuagar con abundante agua.
Calentar un chorrito de aceite en una sartén.
Sellar las piezas de chivo en el aceite hirviendo, dorando bien por ambos lados y reservar.
En la misma sartén, preparar el refrito agregando cebolla y pimiento grande finamente picado.
Potenciar el sabor del refrito con cilantro picado, media cucharada de pasta de ajo, comino molido y pimienta molida al gusto.
Sofreír el refrito hasta que las cebollas estén transparentes y huela bien.
Agregar 2 cucharadas de aceite con achiote al refrito y continuar sofriendo.
Incorporar 2 tomates muy maduros triturados al refrito y sofreír hasta que el tomate tenga la consistencia y aroma perfecto.
Licuar 2 naranjillas peladas muy maduras con medio litro de cerveza.
Agregar lo licuado al refrito y mezclar bien.
Incorporar el chivo reservado al refrito, asegurándose de que la carne quede sumergida en el líquido.
Si falta líquido, agregar jugo de naranjilla sin azúcar.
Tapar bien y dejar cocinar hasta que la carne esté blandita.
Revisar el líquido faltando unos minutos para que esté lista y ajustar la sal.
Si el líquido se está secando, agregar más jugo de naranja.
Volver a tapar y dejar cocinar hasta el final.
Agregar cilantro picado al gusto y mezclar bien antes de servir.
