Left over Injera? No problem. This easy to make Ethiopian dish will take care of that for you. Directions and Ingredients Below - Bismillah enjoy! How to make Ginger-Garlic: https://youtu.be/Qe-km6xHJZU Ingredients *  1 onion diced (large onions) * 1/4 cup oil (canola oil) * 1 - 2 tbls berbere spice mix * 3 ounces tomato paste ( 6 Tbls ) * 2 tomatoes chopped * 2 Ginger-garlic cubes ( link above) * 1/2 tsp Corareêma [ Black Cardamom ] * 1 jalapeno pepper (de-seeded ) * 1Tbls Ethiopian clarified butter * 1 Tsp salt * 1/2 Tsp blackpepper * 1/2 cup water * Left over Injera (4 pieces, torn into pieces) Directions: 1. Add the oil to hot pan. 2. Cook the onions for several minutes until they start to soften and turn translucent. Be sure not to burn them. 3.Add the berbere and stir. 4. After a few minutes, add the tomato paste and cook for several more minutes. 5. Add the chopped tomatoes, and cook on low-medium heat until the tomatoes are thoroughly cooked. 6. Add the ginger-garlic mix 7. Mix in Corareêma and Jalepeños 8. Add water and allow to simmer (start with 1/4 cup) and bring to a boil 9. Add clarified butter, salt and pepper. Simmer for a couple of minutes. 10. Add Injera faced down, slowly ( DO NOT STIR ) Allow it to sit covered for about 5 mins. 11. Gently fold the injera and chop it as you continue to mix - DO NOT OVER MIX. 12.
