Ingredients

  • 1 cup paneer, cubed
  • 1 cup mixed vegetables (bell peppers, carrots, onions), chopped
  • 2 whole wheat tortillas
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/4 tsp turmeric powder
  • Salt to taste
  • 1 tbsp olive oil
  • 1/4 cup yogurt (optional)
  • Fresh cilantro for garnish

Instructions

  1. 1Heat olive oil in a pan over medium heat.
  2. 2Add the chopped mixed vegetables and sauté for 3-4 minutes until they are slightly tender.
  3. 3Stir in the cumin powder, coriander powder, garam masala, turmeric powder, and salt. Cook for another 2 minutes.
  4. 4Add the cubed paneer to the pan and mix well. Cook for an additional 3-4 minutes until the paneer is heated through.
  5. 5Warm the whole wheat tortillas in a separate pan or microwave for a few seconds.
  6. 6Place a portion of the vegetable and paneer mixture onto each tortilla.
  7. 7Drizzle yogurt on top if using, and sprinkle with fresh cilantro.
  8. 8Wrap the tortillas tightly around the filling.
  9. 9Cut in half and serve warm.
