Cut the thick parts of the carrots into 1x2 inch pieces to ensure they cook well.

In a pressure cooker, add 1 tablespoon of ghee and heat it.

Add the grated carrots to the ghee and sauté for 1-2 minutes until slightly softened.

In a separate pot, bring 1 liter of milk to a boil and set aside.

Add 2 ladles of the boiled milk to the pressure cooker with the carrots.

Close the lid and cook for 2 whistles (approximately 5-7 minutes) until the carrots are soft.

Open the lid and mash the carrots using a potato masher until smooth.

Transfer the mashed carrot mixture to a heavy-bottomed pan.

In the same pan, add the remaining 1 tablespoon of ghee and heat it.

Add roughly chopped cashews, almonds, and optional chironji, and sauté until golden brown.

Add the mashed carrot mixture to the pan with the sautéed nuts.

Pour in the remaining milk and mix well, cooking on high heat for about 15 minutes until the milk evaporates.

Add 1.5 cups of sugar and mix well, cooking for an additional 3-4 minutes on high heat.

Stir in cardamom powder and saffron for flavoring.

Optionally, add 100 grams of khoya and cook for another 2 minutes until melted.

Serve warm.
