Wash 1 kg of fresh red carrots thoroughly to remove dirt.

Peel the carrots using a peeler.

Wash the carrots again to ensure no dirt remains.

Grate the carrots using a coarse grater to retain some crunch.

Heat a heavy-bottomed pan or kadhai.

Add 1/2 cup of ghee to the pan and let it heat up.

Once the ghee is hot, add the grated carrots to the pan.

Sauté the carrots on medium flame for 12 to 13 minutes, stirring continuously to prevent burning.

After sautéing, add crushed cashews and almonds (equal amounts) to the carrots.

Add raisins to the mixture.

Stir in 1/2 teaspoon of cardamom powder and mix well.

Cook the mixture for an additional minute.

Add 1 cup of sugar and mix thoroughly until dissolved.

Pour in 3 cups of milk and mix well.

Cook on low heat for 45 to 50 minutes, stirring occasionally to prevent sticking.

After 30 minutes, stir the mixture and cover it to continue cooking.

After 45 minutes, remove the lid and increase the heat to dry out the mixture.

If using, add 200 grams of grated khoya (mava) once the milk has evaporated.

If khoya is not available, substitute with 1/4 cup of milk powder.

Stir in 2 tablespoons of ghee and mix well.

Let it cook for an additional 5 minutes without covering the pan.

Turn off the heat and serve the halwa warm.
