1

Peel the red carrots and cut off the tops and bottoms.

2

Chop the carrots into thick pieces instead of grating them.

3

Add the chopped carrots to a chopper and chop them coarsely in 2-3 bursts.

4

Transfer the chopped carrots to a bowl.

5

In a pressure cooker, heat 1 tablespoon of ghee.

6

Add the chopped carrots and cook for 3 to 4 minutes, stirring occasionally.

7

Pour in 1/2 liter of full-fat buffalo milk and stir.

8

Close the lid of the pressure cooker and cook on medium flame until one whistle.

9

After one whistle, let the pressure release naturally.

10

Open the lid of the pressure cooker and check the consistency; there will be a lot of milk but the carrots should be cooked.

11

Turn on the gas and cook the mixture on medium flame, stirring continuously, to reduce the milk.

12

Continue cooking until the halwa reaches the desired consistency, which may take 10 to 15 minutes.
