Soak 200 grams of chickpeas overnight.

Add bay leaf, cinnamon stick, cloves, cardamom, and black pepper to the chickpeas with 1 teaspoon of salt and pressure cook for 4-5 whistles.

In a separate pan, heat normal oil and add cumin seeds, bay leaf, cardamom, cloves, and black pepper.

Cook onion paste in the oil until golden brown, about 7-8 minutes.

Add 2 tablespoons of ginger-garlic paste and cook until fragrant.

Stir in 1 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and 2 teaspoons of coriander powder.

Add 3 pureed tomatoes and cook until the mixture thickens.

Add the cooked chickpeas with their water and simmer until the gravy thickens.

Finish with a tadka of ghee, asafoetida, red chili powder, and kasuri methi.
