Instructions
- 1Preheat the oven to 350°F (175°C).

- 4Add eggs one at a time, mixing well after each addition.
- 5Stir in evaporated milk, condensed milk, and vanilla extract until smooth.
- 6In a separate bowl, whisk together flour, baking powder, and salt.
- 7Gradually add the dry ingredients to the ube mixture, mixing until just combined.
- 8Pour the ube mixture into the prepared baking dish.
- 9In another bowl, whisk together eggs, sugar, and evaporated milk for the leche flan.
- 10Add vanilla extract and mix until smooth.
- 11Pour the leche flan mixture over the ube mixture in the baking dish.
- 12Prepare a water bath by placing the baking dish in a larger dish filled with water.
- 13Bake in the preheated oven for 45-60 minutes, or until a toothpick comes out clean.
- 14Remove from the oven and let cool for a few minutes.
- 15Invert onto a serving plate and chill in the refrigerator before serving.
