Preheat oven to 160C. Prepare a 6-inch tin.

Whip egg and sugar on medium speed until ribbon consistency, then whip on low speed to remove air bubbles.

Sieve in flour in 2 stages and fold gently until combined.

Warm the milk and butter in the microwave and mix in ube extract and ube powder.

Add 1-2 scoops of batter and mix well.

Pour the mixture into the main batter and fold gently until combined.

Pour the batter into a 6-inch lined tin and bake at 160C for 35-40 mins.
