Cream together 1 cup sugar and 1/2 cup softened butter.
Add 2 large eggs and beat until fully combined.
Add 1/2 cup oil, 1 cup evaporated milk, and 1 cup ube jam, mixing until well incorporated.
Sift together 2 cups flour, 2 teaspoons baking powder, and 1/2 teaspoon salt.
Mix the dry ingredients until fully combined.
Gradually add the dry ingredients to the wet mixture, mixing until fully combined and no lumps remain.
Preheat the oven to 175 degrees Celsius.
Tap and shake the baking pans to release air bubbles.
Bake the cake for 45 minutes.
Cool the cake completely before filling and frosting.
For frosting, use non-dairy whipping cream and add 2 teaspoons of ube flavoring, adjusting to taste.
Optionally add a few drops of purple or violet food color to the frosting.
Use a cake smoother and cake scraper to create a rustic design on the cake.
Create a border on top and bottom of the cake using a 1M piping tip.
Pipe ube jam on top of the cake and optionally add maja blanca or leche flan on top.
