1

Preheat the oven to 160°C.

2

In a bowl, combine the egg yolks, sugar, oil, vanilla, water, and ube flavoring. Mix well.

3

In another bowl, sift together the cake flour, all-purpose flour, salt, and baking powder.

4

Combine the dry ingredients with the wet ingredients until smooth.

5

In a separate bowl, beat the egg whites until frothy, then add the sugar and cream of tartar. Beat until stiff peaks form.

6

Gently fold the egg whites into the batter until fully incorporated.

7

Pour the batter into a prepared cake pan and bake for 40 to 45 minutes.

8

While the cake is baking, prepare the Swiss meringue buttercream by beating the egg whites and sugar over a double boiler until the sugar dissolves.

9

Transfer to a mixing bowl and beat until stiff peaks form. Gradually add the butter, vanilla, and ube flavoring until smooth and creamy.

10

Once the cake has cooled, frost it with the ube cream icing and top with macapuno, grated cheese, and leche flan.
