Preheat the oven to 200°C (400°F).

Slice the aubergines in half lengthwise.

Grease a baking tray with olive oil and place the aubergine halves cut-side up.

Drizzle a little olive oil on top of the aubergines and sprinkle with salt and pepper.

Bake the aubergines for about 30 minutes until cooked through.
