1

Marinate the beef in a mixture of red wine, cognac or brandy, thyme, and herbs de Provence for 24 hours.

2

Strain the marinated meat, saving all the liquid for the sauce.

3

Rub the inside of the cooking pot (dub year or regular pot) with a clove of garlic and some chopped garlic in olive oil.

4

Place the marinated meat into the pot without searing it first.

5

Add chopped onions on top of the meat.

6

Add sliced carrots on top of the onions.

7

Add diced salt pork (or bacon) to the pot.

8

Add 1 cup of unpitted olives.

9

Sprinkle a big pinch of herbs de Provence over the ingredients.

10

Add one star anise and a couple bay leaves to the pot.

11

Add a big pinch of salt and pureed tomatoes.

12

Add dried orange peel for flavor.

13

Pour in the reserved marinade liquid and add pepper and espalette pepper to taste.

14

Cover the pot and bring it to a low simmer on the stovetop.

15

Transfer the pot to an oven preheated to 300 degrees Fahrenheit and let it cook for about three hours or until the meat is tender.

16

Check the pot after one hour on the stovetop to ensure it has reached a simmer before placing it in the oven.

17

After about two hours in the oven, check the tenderness of the meat.
