Transfer the washed lentils to a pot and cover with water.

Bring the lentils to a boil and then quickly reduce the heat to a simmer.

Simmer the lentils covered until tender, about 8 to 10 minutes, adding more water if needed.

Drain the lentils thoroughly and put them back in the pot, covering to keep them warm.

In a large skillet, heat 2 tablespoons of vegetable oil over medium heat and add the onions, cooking and stirring until they are cooked.

In a bowl, mix 2 tablespoons of curry paste with 1 tablespoon of curry powder, 1 teaspoon of ground turmeric, 1 teaspoon of ground cumin, 1 teaspoon of chili powder, 1 teaspoon of salt, and 1 teaspoon of white sugar.

Add the minced garlic and ginger to the curry mixture and blend well.

Stir the curry mixture into the caramelized onions and cook over high heat, stirring continuously for 1 to 2 minutes.

Stir in 1 can of tomato puree and reduce the heat, simmering for at least 5 minutes to warm the tomato puree through and combine all the flavors.
