2 cups finely chopped tomatoes (approximately 3 medium tomatoes)
2 cups roughly chopped potatoes
1 cup roughly chopped cauliflower
1/2 cup frozen green peas
1/4 cup roughly chopped carrots
1/4 cup beetroot (peeled)
1.5 cups water
salt to taste
2-3 teaspoons pav bhaji masala
1 teaspoon dried fenugreek leaves
lime juice
butter for garnish
finely chopped cilantro for garnish

Turn the Instant Pot on sauté mode.

Add 2-3 tablespoons of cooking oil and 1 tablespoon of butter to the pot.

Sauté for a few seconds, then add 2 cups of finely chopped red onions.

Sauté the onions, then add 1 teaspoon of grated garlic and 1/2 teaspoon of grated ginger.

Sauté until the raw smell of ginger and garlic is gone.

Add 1/2 cup of finely chopped green bell pepper and sauté for some more time.

Add 2 cups of finely chopped tomatoes and cover to cook until mushy.

Once the tomatoes are mushy, add 2 cups of roughly chopped potatoes, 1 cup of roughly chopped cauliflower, 1/2 cup of frozen green peas, 1/4 cup of roughly chopped carrots, and 1/4 cup of beetroot.

Mix all the vegetables well.

Add 1.5 cups of water, cover the lid, and ensure the vent is on sealing.

Cancel sauté mode and pressure cook at high pressure for 6 minutes.

After 6 minutes, quick release the pressure and carefully open the lid.

Use a masher to mash all the veggies until smooth.

If the bhaji is too thick, add more water; if too thin, sauté for some more time.

Cancel pressure cook mode and turn sauté mode on again to let it simmer for a few minutes.

Add salt to taste, 2-3 teaspoons of pav bhaji masala, and 1 teaspoon of dried fenugreek leaves.

Add a little lime juice and mix well.

Garnish with more butter and finely chopped cilantro, then cover and let it simmer for a few more seconds.

Prepare the savory dinner rolls (pav) by slitting them from the center.

Heat a skillet and add approximately 1/2 tablespoon of butter, finely chopped cilantro, and a pinch of pav bhaji masala.

Add the sliced dinner rolls to the skillet and warm until there is a light golden brown crust on both sides.

Serve the bhaji piping hot with the warmed pav, adding some butter, cilantro, finely chopped onions, and a piece of lime.
