2 large Potatoes, peeled & diced
1 Cup Cauliflower florets
1 medium-sized Carrot, diced
1/2 Cup Fresh Green Peas
1/2 teaspoon Salt
2 Cups Water (approximately)
1 - 2 Tablespoons Oil
1 Tablespoon Salted Butter
4 - 5 Garlic cloves, chopped finely
2 - 3 Green Chillies, chopped finely
2 medium-sized Onions, finely chopped
3 medium-sized Tomatoes, finely chopped
1 medium-sized Capsicum, chopped
2 Tablespoons fresh Coriander stems, finely chopped
2 Tablespoons Pav Bhaji Masala Powder
1 Tablespoon Kashmiri Red Chili Powder
1 Tablespoon dried Kasuri Methi
1/2 Cup Water (adjust as required)
Salt to taste
1/2 teaspoon Sugar
1 Tablespoon Tomato Ketchup (or Lime Juice)
Freshly Chopped Coriander leaves & chopped Onion, for garnish

Pressure cook the diced potatoes, cauliflower, carrot, and green peas with approximately 2 cups of water until soft.

Mash the cooked vegetables well.

In a pan, heat oil and sauté the chopped garlic and green chilies until fragrant.

Add the finely chopped onions and cook until golden.

Stir in the chopped tomatoes and capsicum, cooking until soft.

Add the pav bhaji masala, Kashmiri red chili powder, dried kasuri methi, and salt to taste, mixing well.

Add the mashed vegetables to the pan, combining thoroughly with the spices.

Adjust the consistency with water as needed and add sugar and tomato ketchup or lime juice.
