1

Start with peas, cauliflower, and carrots as the vegetables.

2

Do not use butter; instead, use onions for creaminess.

3

Leave the potato unpeeled after washing it properly.

4

Steam the vegetables instead of boiling them to retain nutrition.

5

Soak red chilies in water for around 4 hours, then grind them with garlic and some water to make a smooth paste.

6

Steam the vegetables until done, then start assembling the dish.

7

Heat less than 1/2 teaspoon of oil in a steel kadai and add jeera until fragrant.

8

Add chopped onions and salt; if sticking, add a teaspoon of water.

9

Once the onions are done, add capsicum and tomato, then add the red paste and start mashing.

10

Add the steamed vegetables to the mixture and mash them outside the gas to avoid overcooking.

11

Mix the mashed vegetables with the masala, adding salt and nutrient-rich water from steaming.

12

Close the gas once mixed properly and add lemon juice.

13

Serve with whole-wheat pav.
