4-5 potatoes

juice of 2 lemons

Chop cabbage, cauliflower, carrots, and green beans finely.

Grate the carrots.

Add all chopped vegetables into a pressure cooker.

Add 1 liter of water to the pressure cooker.

Close the lid and cook for 2 whistles on high flame.

Let the pressure release naturally for 10 minutes before opening the cooker.

Mash the cooked vegetables using a masher.

In a kadhai, heat 200 grams of refined oil and 400 grams of butter.

Add 500 grams of chopped onions and sauté until golden brown.

Add 1.5 teaspoons of ginger garlic paste and sauté for 1-2 minutes.

Add 1.5 teaspoons of deghi mirch, 1.5 teaspoons of coriander powder, and 1 teaspoon of roasted cumin powder.

Add 50 grams of pav bhaji masala and sauté for a minute.

Add a little water to prevent spices from burning.

Add chopped green bell peppers and tomatoes, and cook until soft.

Add 200 grams of green peas and grated potatoes, and mix well.

Add the mashed vegetables from the pressure cooker to the kadhai.

Add dried fenugreek leaves and amchur powder for flavor.

Mash everything together until well combined.

Add juice from 2 lemons and mix well.
