1

Welcome back, today I'm making a Moroccan style prawn and rice dish.

2

Go through the ingredients: raw prawns, lemon juice, rapeseed oil, tin of chickpeas (drained), paprika, turmeric, salt, pepper, ground coriander, mushrooms, fish stock, green beans, garlic, shallots, spring onions, basmati rice, ginger.

3

Cook the rice as you normally would, using a rice cooker.

4

Add the fish stock to the rice and let it cook.

5

Chop the spring onions and mushrooms into large pieces.

6

Peel and crush the garlic, then chop it finely.

7

Chop the shallots into small pieces.

8

Drain the chickpeas and set aside.

9

Grate a small piece of ginger for flavor.

10

Heat oil and butter in a frying pan, then add the prawns and cook until they turn pink, about a few minutes.

11

Remove the prawns from the pan and set aside.

12

In the same pan, add shallots, mushrooms, half the spring onions, garlic, ginger, and green beans; simmer on low heat for about 10 minutes.

13

Drain the cooked rice, saving a bit of stock.

14

Add chickpeas to the pan and stir.

15

Add approximately 2 teaspoons of paprika, 1 teaspoon of turmeric, and 1 teaspoon of ground coriander, along with a dash of lemon juice; mix well.

16

Add the saved stock and the cooked prawns back into the pan, followed by the rice; stir to combine.

17

Cover and let simmer on medium heat for about 10 minutes to warm through and infuse flavors.

18

Season with salt and pepper, then sprinkle remaining spring onions on top.

19

Let it simmer for another 5 minutes before serving.
