Start with 2 pounds of beef covered with water in a pot.

Put the lid on and bring to a boil, skimming off the foam.

After about 45 minutes of cooking, add chopped onions and 2 chopped plum tomatoes (skin removed) and 1/2 tbsp tomato paste.

Let it come to a boil again.

After cooking for about an hour, add potatoes, red and orange peppers, and cut-up carrots in chunks.

Season with salt to taste and add 2 dried bay leaves.

Cover the pot and cook until the carrots and potatoes are tender.
