90g barley semolina
1 teaspoon tomato paste

Start by cooking a handful of chickpeas that were soaked the night before.

In a pot, add a little butter and a little oil to prevent the butter from burning.

Add the two pieces of meat and let them cook for 10 minutes.

Add grated onion, two chopped carrots, and one chopped zucchini, along with half a tomato and let everything cook for 10 minutes.

Add the celery stalk, coriander stems, and mint leaves.

Season with salt, paprika, pepper, ginger, and a teaspoon of spice mix.

Add some of the chickpea cooking water and let it simmer on low heat for 1 hour with 3 liters of hot water.

Remove the meat, which consists of one piece of lamb and one piece of veal, and blend the mixture.

Add the remaining coriander leaves, 90g of soaked barley semolina, and 1 teaspoon of diluted tomato paste.

Add the chickpeas and the chopped meat back into the pot, cover, and let it cook on low heat for another 20 minutes.
