Knead the dough for about 5-10 minutes until elastic.
Cover the dough and let it rest for 30 minutes.
Prepare the filling by mixing chopped onion, spinach, and spices in a bowl.
Divide the dough into small balls and roll each ball into a thin circle.
Place a spoonful of filling on one half of the dough circle.
Fold the dough over the filling to create a half-moon shape and seal the edges.
Heat a convex griddle (saj) over medium heat and add a little olive oil.
Cook the gutabs for 3-4 minutes on each side until golden brown.
Remove from the griddle and keep warm while cooking the remaining gutabs.
