In a pressure cooker, add 3 large potatoes (cleaned, peeled, cut into pieces), 3 medium carrots (chopped), 1 cup fresh green peas, and 1 small cauliflower (cut into florets).

Season with salt, 1/4 teaspoon turmeric powder, and 1 teaspoon kashmiri red chilli powder. Add 2 cups of water, close the cooker, and cook for 4 to 5 whistles on medium flame.

Mash the cooked vegetables with a potato masher until soft and set aside.

In a large iron skillet, add 100 grams of unsalted butter and 2 tablespoons of oil. Heat on high.

Add 1 teaspoon of cumin seeds and 3 large onions (finely chopped). Sauté until golden brown.

Add 3 large green chilies (chopped) and 2 teaspoons of ginger-garlic paste. Cook for 2-3 minutes.

Add 5 medium tomatoes (finely chopped) and cook until soft.

Stir in 1 teaspoon salt, 4 teaspoons turmeric powder, 2 teaspoons kashmiri red chilli powder, and 4 teaspoons pav bhaji masala powder.

Add 1 large capsicum (finely chopped) and cook for 2-3 minutes.

Add the mashed vegetables to the skillet and mix well with the masala.

Add 1/2 cup of water and let it simmer for 5 minutes, adjusting seasoning if necessary.

In a separate tawa, toast the pav buns with butter until golden brown on both sides.

Serve the pav bhaji hot with toasted pav.
