Today, Lumpiang Shanghai has found its way into homes worldwide, often adapted with various fillings to suit local tastes.

Finely dice the onion, carrot, and Chinese celery.
In a bowl, combine ground pork, diced onion, carrot, Chinese celery, salt, oyster sauce, an egg, and freshly ground pepper.
Mix everything thoroughly until well combined.
Let the mixture rest for 15 minutes to blend flavors.
Prepare the spring roll wrappers by gently peeling them apart and covering them with a damp cloth.
In a small bowl, combine 1/8 cup of water with 2-3 tbsp. of cornstarch to make a sealing paste.
Take a spring roll wrapper and place about 1 tbsp. of the pork filling at the lower part of the wrapper.
Roll the wrapper tightly over the filling, folding in the sides as you go, and seal with the cornstarch paste.
Repeat the rolling process for the rest of the filling.
Preheat the air fryer at 190°C (375°F) for about 3-5 minutes.
Place the lumpiang shanghai in the air fryer basket in a single layer, ensuring not to overcrowd them.
Lightly brush the spring rolls with a little oil.
Air fry the lumpiang shanghai at 190°C for about 12 minutes, flipping halfway through.
After 12 minutes, increase the temperature to 200°C (390°F) and cook for an additional 3 minutes.
