2 tbsp oil
1 tbsp ghee (optional, for flavor)
2 medium onions (thinly sliced)
1 tbsp ginger garlic paste
1 tsp turmeric powder
1 tsp red chilli powder (adjust to taste)
2 tsp coriander powder
½ tsp garam masala
1 tsp black pepper powder
1 tsp fennel powder (saunf)
1 small cinnamon stick
2 green cardamoms
2 cloves
Salt to taste
8–10 cups water
Fresh coriander leaves (chopped)
Lemon wedges (for serving)

Clean the Paya by washing goat paya thoroughly.

Boil once with water, discard water, wash again to remove smell and impurities.

Heat oil and ghee in a pressure cooker.

Add whole spices (cinnamon, cardamom, cloves).

Add sliced onions and fry until golden brown.

Add ginger garlic paste and sauté till raw smell disappears.

Add turmeric, red chilli powder, coriander powder, black pepper, fennel powder and salt. Mix well.

Add cleaned goat paya and roast for 5–7 minutes on medium flame.

Add water, close lid and pressure cook for 10–12 whistles (or 45–50 minutes on low flame). Let pressure release naturally.

Open cooker, check consistency. Add garam masala and chopped coriander leaves. Simmer for 5 minutes.
