Preheat the oven to 180°C.
Heat oil in a pan and add mustard seeds and cumin seeds until they splutter.
Add finely chopped onions and sauté until golden brown.
Prepare a paste with ginger, garlic, and green chili using a mortar and pestle, then add to the onions and sauté until fragrant.
Add chopped vegetables (beans, carrots, and frozen peas) to the pan and sauté until cooked.
Add mashed potato and crumbled paneer to the vegetable mixture and mix well.
Season the filling with salt and turmeric powder, and cook until the moisture from the paneer evaporates.
Add fresh chopped coriander leaves and mozzarella cheese to the filling and mix well.
Roll out the puff pastry on a floured surface and cut into squares.
Place a spoonful of filling in the center of each pastry square and fold to seal.
Brush the tops with milk to help seal the pastry.
Place the puffs on a baking tray lined with parchment paper.
Bake for about 20 minutes until golden and puffed up.
