Wash hands and clean the meat thoroughly by soaking it in hot water for about 10 minutes, then drain and rinse again with hot water.

Drizzle the juice of half a lemon onto the meat to tame the gaminess and begin tenderizing it.

Deglaze the pot with 2 cups of water, scraping up the drippings from the bottom, then cover and cook for 45 minutes until the goat is fork tender.

After 45 minutes, add Yukon Gold potatoes to the pot and cover, cooking for an additional 10 minutes until the potatoes are tender and the sauce thickens.

Garnish with the remaining half of the chopped onion and bell peppers, turning off the heat to keep them crunchy. Cover and let residual heat finish cooking.
