5 tablespoons premium dark soy sauce
1 liter water
1 1/2 tablespoons oyster sauce
1 teaspoon chicken stock powder
100 g fish cake
100 g chai sim

Marinate chicken with salt, white pepper, cornstarch, and sesame oil, then set aside for 10 minutes.

Prepare prawns by cutting off the shell and antenna, and optionally devein them.

Heat a Lodge 32 cm wok over medium heat and add a little oil.

Add 150 g of fresh cooked yellow noodles to the wok and fry for about 1 minute to reduce alkaline taste and moisture.

Add 4 cloves of chopped garlic and stir until fragrant.

Add 1/2 teaspoon sugar and 5 tablespoons of premium dark soy sauce, mixing well to coat the noodles.

Pour in 1 liter of water, 1 1/2 tablespoons of oyster sauce, and 1 teaspoon of chicken stock powder, mixing well.

Cover and braise for 2 minutes on medium heat.

Add marinated chicken, prawns, and 100 g of sliced fish cake, cover, and cook for another 2 minutes on medium-high heat.

Add 100 g of chai sim and mix well to soften the vegetables.

Increase heat to reduce the sauce slightly, then add white pepper and additional dark soy sauce if desired.

Turn off the heat and serve.
